Favorite Weekend Dish: “The Wise Weekender”

If I’m being honest, most weekends we go through at least 1 package of bacon. Some people think bacon is the anti-Christ, but for multiple reasons, we do not. That said, next to the classic BLT (with added cucumber and avocado), our favorite weekend dish is what we’ve affectionately dubbed “The Wise Weekender.”

Here’s what you’ll need for this incredibly quick, easy and filling lunch or dinner staple:

  • Turkey Slices (your preference in brand/type/home-cooked/store-bought)
  • Fresh greens (we use leafy kale)
  • Taco seasoning
  • Fresh avocado
  • Bacon (usually use low sodium but grabbed the wrong package this week)
  • Ezekiel Sprouted Grain tortillas
  • BBQ sauce (optional)

Prepare your bacon. We prefer crisp bacon here, so we lay it on a cooling rack like so…

And then cook at 400 degrees until desired crispiness. Pan-fried is amazing, too, but that’s simply too much work for the weekend ;)

Lay your tortilla out and slather it with avocado. I usually use 1/2 – 3/4 avocado per tortilla. Then sprinkle with the taco seasoning and layer your goodies. (If you’re a BBQ user, use the BBQ sauce after you smear on the avocado.)

Roll. Slice. Pair with some fruit and additional veggies. Enjoy.

 

Toddler Test: Finn, in classic 3 year old style, loves this wrap but only if it is unassembled. He gets a hodge-podge plate with bacon, turkey, 1/2 tortilla, grapes and baby carrots. (He won’t eat avocado or uncooked kale.) But he devours the individual pieces and usually fights Justin off from stealing his food!

 

The Wise Weekender

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients

  • Turkey Slices (your preference in brand/type/home-cooked/store-bought)
  • Fresh greens (we use leafy kale)
  • Taco seasoning
  • Fresh avocado
  • Bacon (usually use low sodium but grabbed the wrong package this week)
  • Ezekiel Sprouted Grain tortillas (or gluten-free corn tortilla)
  • BBQ sauce (optional)

Instructions

Prepare your bacon. (Option: Layer on a cooking rack over a foiled lipped baking sheet. Cook at 400 degrees for 15 minutes or until desired crispiness.)

Smear 1/2 – 3/4 avocado over tortilla.

If desired, add BBQ sauce.

Sprinkle with taco seasoning.

Layer turkey, bacon, and greens.

    This looks amaaazing. I always add avocado to my BLTs, it adds such a buttery deliciousness! We really don’t have any weekend staples, but any Saturday that starts with a pot of coffee and a stack of homemade pancakes or waffles is a win in my book. As we prepare for a beach vacation though, those pancake mornings have been few and far between…it will be worth it, right?! ;)
