Justin has been out of town this week. He’s managed to skip town for both insane “Polar Vortex” incidents this year. I’m beginning to think he’s doing this on purpose. Kidding! 🙂
Justin has been working his buns off on a variety of projects, one being the release of his first book, The Social Church. If you like the church or you like social media, you’re going to love this book! It’s available for pre-order on Amazon. You can even check out the first chapter for free from his site. The official release date is Monday, February 3. I could not be more proud of this guy. He really is the hardest working guy I know! (And he’s cute!)

Fantastic Maps: I love maps! Is that strange? I could look at the maps on this link for hours. It’s so fascinating to me how things work and flow and pace in life. If you’re anything like me, a large majority of these 40 maps will really intrigue you.
Fantastic Oil Explanation: I’ve shared frequently that we do not use canola or vegetable oil. We use extra virgin olive oil for raw uses (ex: salad dressing) or cooking at low temps. For high temp cooking, we predominately use grape seed oil, macadamia nut oil, or coconut oil. Canola oil is cheap and toxic. Check out the video in this link explaining how canola oil is made, including washing in a hexane solvent and sodium hydroxide, as well as adding bleach the lighten the color.

Fantastic Princess Cake: Birthdays are a big deal around here, but they aren’t something we spend a lot of money on or plan for months in preparation. I’ve started thinking about Evie’s 2nd birthday in March. She’s becoming all-girl very quickly. Loves dolls, jewelry, make-up and anything that sparkles and shines. Here’s an allergy-friendly (and dye-free) cake I think any little girl would love!
Fantastic Dinner: Juli from paleomg.com is one of my favorite food bloggers. Her food is gluten-free, dairy-free and (mostly) Paleo. Plus, it doesn’t hurt that she’s wicked hilarious! We made this recipe the other night with a side of kale chips. Scrumptious!
Fantastic Pants: Are theses pants just not the cutest!?! So casual and free. I’m needing more of this for my spring/summer wardrobe instead of depending on straight black yoga pants every.single.day. Polar Votex be gone!
Fantastic Snack: We’ve greatly minimized the amount of heavy carbs we consume over the last several months. We are working to have Paleo dinners and only consume whole grains other times. Right now we are 20% Paleo dinners, 60% gluten-free dinners and 20% whole wheat included with dinner. (We are always dairy-free.) It’s amazing how great the change can make you feel! One of the areas I’ve been working hard to change is the kids afternoon snack. The morning snack is always fruit and there’s no argument there from the kids. They have a little more flexibility with their afternoon snack, which tends to be pretzels or crackers or nuts. Gluten-free and grain-free crackers are pretty expensive and tend to have other funky ingredients, so we’ve been making our own. Here’s a new favorite!
